The "Trippa alla Fiorentina" is one of the most famous recipes of the florentine cousine and it is very very easy te prepare.

HOW TO PREPARE:
First of all buy at any supermarket a sliced trippa. Wash and dry it very well.
Peel the onion, the celery and the carots and cut them in small cubes.
In a soucepan brown the olive oil, the butter, the garlic and the laurel and add the vegetables that you have prepared before. After a few minutes add the trippa and when it is dry pour some white wine and let it evaporate completely.
At this point you can add tomatoes sauce, salt and peper and let it cook for about 35/45 minutes over a low heat.
When you finish cooking let it stand for about 5 min, put some grated Parmesan cheese on it and serve hot !!!
